Text to shape for logo, how to I cut out parts?

Im trying to create a couple of different logos, using text which I convert to shapes.

If I want to cut out parts of the newly formed Shapes, how do I do? Ive tried watching a couple of tutorials but none covers my problem.

For example, I have this letter B where I want to remove the backpart on the left side so it looks like the number 3 and change the length of both the top and bottom line.

The quickest way I know of is to (1) create a rectangle shape on the left side covering the area you want to delete, (2) select both layers and (3) subtract the new top shape from the "B" (this creates a group like element with the two shapes) then (4) select and merge (right mouse click) the two shapes in the left side bar. This leaves only the "3" which can be edited as you desire.

I grabbed your picture and made my own (blue) shape from a selection of your (black) "B" and changed some lengths, easy peasy.
