As we don´t have an "Erase" blend mode which is the quickest way to "draw holes" into images - I don´t know what you have under your image as it only work with a transparent background. Unless I´m mising something obvious it´s quite e few steps in Pixelmator Pro:
1. draw a rectangle of your entirely image dimensions
2. generate text above in exact font+size+position (text can´t be altered down the road)
3. with text tool still active hit Convert into Shape
4. then go Format->Shape->Merge Shape Components
5. select rectangle + text shape and go Format->Shape->Subtract Shapes
6. The image must be above the shape. Select it and context-click and choose: Create Clipping mask. Done.
If you want a certain image to poke through the text hole there´s an much easier way to do so with editable text.
