All of my controls (highlighted in red) are completely unusable because, it appears, that it has something to do with the tab bar preventing me from clicking on them. This hasn't always been the case, but how do I turn OFF the ability to open documents in a new tab?? Even if I have a single document open, the same problem exists.

That's a known issue that first appeared on macOS Big Sur. We'll be sorting it out in future updates. For now, Pixelmator Classic should respect the global settings of the macOS. In the System Preferences, check what's selected in the "Prefer tabs when opening documents" pop-up menu under the General settings. You can choose "Never" there to no longer open documents in tabs.
