Why do the letters have individual outlines in Pro and one global outline for the whole word in classic ? I would like to have the choice ... Image

That's a bug — I was able to reproduce it with that font and we'll do our best to fix it. In the meantime, a workaround would be to convert the text to a shape. To do that, you can Control-click the layer in the Layers sidebar and choose Convert into Shape. That will make Pixelmator Pro use our stroke, rather than the built-in one that the macOS text system includes. For that reason, I also got the same result when applying a stroke to this font in Pages.
