I just downloaded this application and the langauge is in Japanese.. how do I change this back to English?

Pixelmator adopts the system language used. So if your system language is Japanese Pixelmator will use that.
If you want to keep your system language in Japanese but want Pixelmator to use English then you can use an app like this: http://www.tj-hd.co.uk/en-gb/languageswitcher/
